- 3 medium apples
- 1 tablespoon coconut oil
- ½ teaspoon cinnamon
- ½ tablespoon lemon juice ,optional
Preheat oven to 375℉ / 190℃. Add the coconut oil to a baking dish and warm in the oven for a few minutes to melt. Remove from oven.
Core and cut apples into ¼ - ½ inch (0.6 cm - 1.2cm) thick slices. (See notes)
Add the cinnamon and lemon juice to the melted coconut oil and stir to combine. Add the apple slices and toss until well-coated.
Bake for 25-35 mins (depending on the type of apple and how thin you slice the apples), or until soft but not falling apart.
APPLES: Firm apples like Pink Lady, Jazz, Kanzi, Granny Smith, Fuji, Honeycrisp, or Gala work well. Sweeter varieties are great in this recipe as there is no added sugar, but mixing sweet apples with tarter varieties can provide a nice balance of textures and flavors.
SLICE SIZE: If making for a baby, thicker slices are better as easier to pick up - usually around 12 wedges/slices per apple. However, if you are looking for slices to top, yogurt, oatmeal, pancakes etc you may wish to go thinner - around 24 slices per apple.
SWEETNESS: No sugar is added to this recipe as many of my readers are parents to young children. If you prefer something sweeter, you can add a little maple syrup or sugar during the mixing stage. Adjust to suit your preferred sweetness.
