Weetabix Pancakes

3 ingredient breakfast pancakes made from Weetabix, banana and egg. A perfect breakfast option for baby-led weaning, toddlers and beyond.

Equipment

  • 1 Non-stick Frying Pan

Ingredients

  • 1 Weetabix biscuit (16g if using broken biscuits / crumbs)
  • 1 banana
  • 2 eggs
  • ½ teaspoon cinnamon

Instructions

  • Add the Weetabix to a blender or food processor and blitz until a fine crumb. 
  • Mash banana and add to medium mixing bowl, add the egg, Weetbix crumb and cinnamon and mix until combined well. 
  • Spray a non-stick fry pan with oil (or add a little butter or oil of choice) over medium heat. Add 1-2 tablespoons of the pancake batter to the pan to make one pancake, continue to fill the pan in a single layer, leaving enough side space to easily flip. 
  • Fry for around 2 minutes on each side, take care when flipping. Depending on the stove top, turn down to medium/low heat to ensure the batter cooks all the way through without burning.

Notes

If you do not have a food processor/blender, add the wheat biscuit to a bag and crush it well with a rolling pin. 
If your kids love Weetabix, try adding a second biscuit to the mixture!
