Step by Step Instructions (with Images)
- Squeeze juice from zucchinis - Skip this step and the mixture will be too wet. Place the shredded zucchini onto a clean cloth and squeeze.
- Mix - Add the grated zucchini to a mixing bowl with the remaining ingredients. Mix until combined.

- Bake - Place in preheated oven for around 13-15 mins, until golden brown and crispy on the outside.

How can someone get.57 of an egg. the non-metric measurements for a smaller serving size of 6 is un-doable. .14 of a cup
Amy
Hi Bonnie, this recipe makes 21 small zucchini bites. You need 2 eggs for this. If you wish to make less then I recommend halving the recipes and using 1 egg. I do not recommend reducing the recipe by any more of this due to it being hard to spit an egg! You can freeze any leftovers 🙂

My 7month old approves of these on his baby led weaning journey.
My husband approves too!
Looking forward to having a stash on hand when I'm out of time. Thanks for the advice on storing!
